We are so excited to see more people are enjoying Hojicha Powder. Hojicha is a roasted green tea, and one of the traditional Japanese green teas. Hojicha Powder is easy to use, exactly like Matcha Powder.
Recently, we were requested to make Hojicha Powder recipes for “baking.” Here is our first one. This bread is light, moist, and flavorful. Check it out!
Ingredients:
2 cups unbleached flour
1 Tbsp. unsweetened shredded coconut
1/2 tsp. pumpkin pie spice
1 tsp. ground Hojicha / Hojicha powder
1/2 tsp. salt
1 tsp. baking soda
1/2 c sugar
1/4 cup brown sugar
1 cup pecans
1 1/2 cups mashed ripe bananas
1/4 cup plain Greek yogurt
2 eggs
1/4 cup peanut oil
Instructions
Preheat the oven to 350 ℉. Prepare 9″ x 5″ x 3″ loaf pan: grease and flour all the sides.
In a large bowl, whisk together the dry ingredients (from flour to brown sugar in the list). Add 1 cup pecans and stir well.
In a separate bowl, whisk together the rest of the ingredients.
Add the wet ingredients to the dry ingredients and stir until combined.
Scrape the batter into the prepared loaf pan.
Bake for 50 to 60 minutes, until a toothpick inserted comes out clean.
Remove the bread from the oven and cover it with foil to keep it moist. Allow it to cool completely in the pan.
Remove the bread out of the pan. Slice and serve.
