1. Higher in Catechins / EGCG
Typically, Japanese Green Tea uses steaming method and Chinese Green Tea uses panning, or roasting method to stop oxidation after tea leaves are harvested, and steaming method preserves more Catechins and EGCG in tea leaves.
Originally, roasting method was used in Japan since the method was introduced when green tea was brought from China. During the 18th century, a new process, steaming method, was invented in Uji, Kyoto Prefecture. This new method produced fresher, and more flavorful green tea, and it quickly dominated the market nationwide. The success of this new method also contributed to spreading the custom of green tea drinking throughout Japan.
