Northwest
Harvest Casserole with Green Tea (Great
for Leftover Turkey!)
The
ingredients can vary with the creativity
of the chef, be bold!
Preheat oven at 375 degrees.
In rectangular glass baking dish, sprayed
with canola oil) add:
½ can cream of chicken soup (other ½ will
go on top)
2 to 4 medium Yukon Gold potatoes, very
thinly sliced
1 medium very thinly sliced Walla Walla
sweet or Candy onion
2 cups fresh string beans (steamed slightly
before adding)
1 cup fresh mushrooms (Shitake or Crimini
are best)
1-2 cups cut up ( bite size) chicken or
turkey meat (any part will do)
¼ teaspoon Edible Green® ground green
tea mixed in with ½ of cream of chicken
soup
1 cup goat cheese crumbled over
½ to 1 cup Enriched Rice or Soy Milk thickened
with -2 T flour, rice flour, cornstarch
or tapioca flour
2 Tablespoons butter (50/50, Smart Balance
Light) cut up and dropped evenly over all
Do 5 minutes before serving! Top with
French fried Onion Crisps (or Caesar Style
Bread Crumbs and little grated cheese)
Bake all for 45 minutes, check to see if
potatoes are done. Add topping, bake 5 minutes.
Serve with salad and fruit (pears, apples
and mandarin oranges).
